Traditional Recipe of Ginger Pickle

Innovation Description
The traditional knowledge holder has suggested traditional recipe of ginger pickle.
Ingredients: 1 kg rhizome of ginger (Zingiber officinale Roscoe), 500 g fruit of green chilli (Capsicum annuum L.), 200 g powder of unripe dried fruit of Mango (Mangifera indica L.), 150 g cloves of Garlic (Allium sativum L.), 50 g seeds of Kala gera (Baccharoides anthelmintica (L.) Moench), 50 g seeds of Azvine (Trachyspermum ammi (L.) Sprague), 50 g seeds of Jira (Cuminum cyminum L.), 250 ml Mustard oil and 100 g Salt.
Preparation: Collect, wash and cut rhizome of ginger into small slices. Chop green chilli and cloves of garlic to make paste and add Kala gera, Azvine and Jira to the paste. Roast the paste. Add prepared paste, Mango powder and Mustard oil to Ginger slices and mix well. Fill the mixture in a bottle and cover with muslin cloth. Keep it under sunlight during day and cover it with lid at night, for 15 days to prepare pickle.
